Information & Character Riesling is usually late maturing, but Prendina harvests the grapes at the beginning of September, just ten days later than the previous varieties and early in the morning to take advantage of the cool temperatures. Harvested manually and there is a careful selection of the best bunches. Once the grapes have entered the wine cellar, the winemaking process is done in an oxygen-free environment and during the crushing an injection of inert gases is made to preserve all the aromas typical of Riesling. Mineral notes that develop as the wine matures. Fine flavors of white flesh with good structure.

Production 10-15 days of fermentation and skin maceration at 25-30 degrees in steel tanks.

Soil Lime and clay-rich soil and to some extent sand.

Goes with Perfect with seafood and white meat, as well as spicy food.

The family's encounter with the world of wine begins with Cavalchina, located in an area whose history goes back a long way: in 1848 it was registered and classified by the ruling Habsburg authorities as a wine-growing district, renowned for its superior quality and excellent production consistency. Cavalchina not only has a rich wine history but also has historical significance as it was at the centre of the Italian Wars of Independence I and III.
