Information & Character The careful selection of grapes and oak barrels allows Sango to take the characteristic notes of Toros Tinta a step further. Intensity, personality and minerality coexist in every bottle. Selection of grapes that are over 70 years old and subsequent cold pre-fermentative maceration and fermentation at controlled temperature. Then aged for 20 months in very fine-grained French oak barrels. Spicy aromatic in the aroma with hints of minerals. Ripe jammy fruit with a little licorice & leather in the velvety background.
Production The wine undergoes malolactic fermentation and is aged only in oak tanks.
Soil Sandy and silty soils.
Goes well with charcuterie, creamy meats, cheese, pizza and pasta dishes.
About the Producer
Rejadorada is the fruit of the passion of two restless minds: Luis Remesal, who in 1999 took up the family winemaking tradition, and José A Fernández `Chenco`, a leading oenologist of many years in Spain. Together they founded the Bodegas Rejadorada Palace and in 2003 they inaugurated the current winery in San Román de Honija, where once again two passionate non-conformists have taken over the family tradition: Mario Remesal and the oenologist Roberto Martín, adding passion to all their processing
