Information & Character Their champagne "Blanc de blancs" comes from their 7 plots of Chardonnay planted on the Chigny-les-Roses and Ludes terroirs. With a rich terroir, the soil mainly composed of chalk, it produces straight wines with magnificent freshness, which favor long aging. The vines are worked and plowed with respect for the living. Traditional vinification in stainless steel barrels. Malolactic fermentation completed. Cellar aging for at least 48 months on "lattes". It is an elegant champagne with a fine and refined effervescent consistency. Its expressive nose reveals floral aromas before revealing notes of wine peach and bread tones. This champagne with a light and airy profile has a beautiful structure with a lot of freshness and a rich, dense and long finish.
Production The wine undergoes malolactic fermentation and is aged for at least 48 months.

About the Producer
The vine culture has always existed in Chigny les Roses since the end of the 19th century. However, the production of champagne will begin later. It all really began in 1950, when Robert Thoumy decided to market his expertise and market these first bottles. With the support of his son Michel, he decided to take over his father's company in 1972. Michel then passed on his passion to Jean-Philippe, who now runs the estate. Today, he has the chance to share this passion with Thibaut, the fourth generation, the youngest of his two sons.
