Information & Character The highest quality grape varieties are selected and harvested when the grapes are at their optimum ripeness. The harvest is then carried out quickly in the wine press where the must is extracted in a long cycle at low pressure (pneumatic press). The juice is then poured into oak barrels in the Bertranges forest for fermentation between 15 and 18 degrees. After fermentation, the wine continues its two-year fermentation on the lees. The wine is bottled after the oak barrels have been assembled and aged for at least 6 months before being sold so that it can be tasted as soon as you buy it. Fine fruity aroma, with hints of gooseberry, passion fruit, nectarine and lime. Aaromatic, fruity, very fresh with hints of gooseberry, passion fruit, apples, blackcurrant leaves, mineral and citrus. Tight and concentrated.
Production Fermented in oak barrels from the Bertranges forest and then left on the lees for two years. It is therefore significantly more barrel and aging-influenced than a regular young Sancerre.
Soil Limestone and flint soil.
Goes with Perfect with salads, seafood, spicy food and goat cheese.
About the Producer
Domaine Raimbault-Pineau is located in the village of Sury-en-Vaux, about 5 km from Sancerre in the Loire Valley, France. It is run by the Raimbault-Pineau family and counts its winemaking generations to 13 generations, with activity for over four centuries. The vineyard covers several appellations (AOC): including Sancerre, Pouilly-Fumé, Coteaux-du-Giennois and Menetou-Salon is a traditional, family-owned and quality-driven winery in the Sancerre area that combines the knowledge of old generations with modern winemaking and a terroir consisting of limestone, clay and flint. Their white wine made from Sauvignon Blanc is the most typical of the area, but they also make red and rosé (or at least red from Pinot Noir).
