Information & Character The grapes reach the cellar in a short time and are directed to the destemming process using dry ice which prevents the berries from oxidizing and by cooling down the temperatures they preserve their original characteristics. Cool temperatures are maintained for 7/8 days and allow the development of indigenous yeasts. The alcoholic fermentation starts spontaneously at around 12°C up to 27°C and after draining the skins, malolactic transformation takes place in stainless steel. The wine develops in Slavic and French oak barrels of various sizes for at least 24 months followed by a further minimum of 6 months in the bottle. : Nuanced, fruity aroma with notes of dark cherries, ripe strawberries, barrels and fresh herbs. Complex, fruity taste with notes of dark cherries, plums, violets, dried herbs and cinnamon.

Production 18-20 days of fermentation and skin maceration at 30 degrees in stainless steel tanks.

Soil Limestone, schist, clay and volcanic soil.

Suitable for Perfect charcuterie, game and grilled meat.

Fattoria del Pino is a small, family-run winery located at the foot of the Montosoli hill in Montalcino, Tuscany – an area known for its prestigious Brunello wines. The winery was founded in 2000 by Jessica Pellegrini, who still runs the business with a focus on traditional winemaking and respect for nature.
