Information & Character The grapes reach the cellar in a short time and are directed to the destemming process using dry ice that prevents the berries from oxidizing and by cooling down the temperatures they preserve their original characteristics. Cool temperatures are maintained for 7/8 days and allow the development of indigenous yeasts. The alcoholic fermentation starts spontaneously. After draining the skins, malolactic transformation takes place in stainless steel. The wine develops in Slavic and French oak barrels of various sizes for a few months followed by a further refinement in the bottle for at least 4 months. Nuanced, fresh aroma with hints of red cherries, strawberries, cedar, fresh herbs and cinnamon. The taste is complex with fresh red berries and rustic fresh herbs in lovely balance.

Production 10-15 days of fermentation and skin maceration at 30 degrees in stainless steel tanks.

Soil Limestone, schist, clay and volcanic soil.

Perfect for charcuterie, pasta dishes.

Fattoria del Pino is a small, family-run winery located at the foot of the Montosoli hill in Montalcino, Tuscany – an area known for its prestigious Brunello wines. The winery was founded in 2000 by Jessica Pellegrini, who still runs the business with a focus on traditional winemaking and respect for nature.
