Information & Character From Castrillo de Duero at 920 meters above sea level the grapes grow. The grapes are picked at their optimum ripeness point and harvested manually in 15 kg boxes. Well in the vineyard the harvest goes through a grain selection table, and later a gentle destemming and pressing. Then for fermentation with an alcoholic maceration cold pre-fermentation is carried out in an atmosphere to extract fruity aromatic compounds of the grape. Very elegant aroma with mineral notes. Also feel the aromas of balsamic, blackberry, raspberry as well as spicy notes from the wood. Lively in the mouth with very good structure. The wine has a long finish with depth and lies elegantly in the mouth.
Production The wine undergoes cold fermentation for 28 days and is then aged for at least 20 months in French oak barrels.
Soil Alluvial with sand and clay to lime.
Suitable for Perfect charcuterie, meat dishes of lamb, pork and poultry.
