Information & Character After destemming, the must is fermented on the skins in new 500-liter French oak barrels with open tops. The pre-fermentation maceration lasts for 5 days. Manual racking is carried out daily during the 20-day fermentation period. The post-fermentation maceration lasts for 5 days before racking. The wine is aged in 500-liter second-year barrels and remains in them until Patrick Paulen and the technical team decide to convert them to stainless steel. The wine is neither clarified nor filtered. Intense and direct aroma with vegetal notes typical of the variety, red fruit with a balsamic vinegar background. On the palate it shows the structure of this variety in a perfect harvest. Elegant entry with a perfect balance between acidity and alcohol. Medium-long finish with hints of balsamic vinegar.
Production The wine is fermented in 500-liter French oak barrels with open tops for 5 days, until the technical team decides on storage in steel tanks.

About the Producer
Tianna Negre is a winery located in Binissalem, one of the island’s most important wine regions with a very long winemaking tradition. The winery is run by the Morey-Garau family, who have roots in the area and aim to revive Mallorca’s historic viticulture. The modern facility opened in 2007 and combines new technology with respect for the environment and traditional craftsmanship. The vineyards cover around 35 hectares and are characterised by the local soil type “Call Vermell”, an iron-rich limestone and clay soil that gives the wines a special character. They work with both local grape varieties such as Manto Negro and Callet as well as international varieties, which creates a mix of tradition and modern style.
