Information & Character After the careful selection, the crushing process begins where the skin is broken to release the juice. This is followed by the fermentation period, where the must is in contact with the pulp, skins and seeds in large oak vats with a capacity of 5,000 liters. After alcoholic fermentation, a second fermentation is carried out, where malic acid is converted into lactic acid, which is called malolactic fermentation. Then the wine passes to the French barrel for at least 18 months. Fresh and intense fruity aromas such as raspberries, red currants, cherries. Well integrated with violets, lavender and a mild spice and eucalyptus touch.

Production The wine undergoes malolactic fermentation and is aged only in oak tanks.

Soil Sandy and silty soils.

Goes well with charcuterie, creamy meats, cheese, pizza and pasta dishes.

About the Producer

A project by Oscar Garrote, Javier Ortega from Pico Cuadro and Christiano Van Zeller. For "Terra Duro" we only use grapes from post-phylloxera vines around 140 years old, growing in a unique "terroir" located in the historic Pago "Bardales" at around 750 meters above sea level. The main part of the work is done manually, such as pruning, chopping around the vines, treatment with sulfur or powder of stinging nettles. Only for plowing are mechanical means used. For the harvest, small boxes of 10 kg are used. Destemming is also done manually and fermentation takes place in oak barrels. New oak barrels are used for the aging which lasts between 8 and 14 months. In order to respect the natural characteristics of the wine, no filtering or finishing techniques are applied. Powerful but velvety. Respecting the ripe fruit with the right touch of wood. A true Toro wine.
