Information & Character Salty overtones interspersed with dark fruit, leather, black pepper and notes of clove and cinnamon jump out of the glass. The oak provides vanilla, mocha and dark chocolate notes that support the fruity and spicy overtones. On the palate plum, dark chocolate and a mix of spices follow up on the full-bodied palate, which is backed by soft tannins that provide structure, length and finesse to the finish. The warmer growing season favored the production of concentrated fruit flavors in the grapes and wine. The large difference in day and night temperatures led to good color development, ripe tannins and acid retention. The must was cold macerated for four days before fermentation. A slow and steady fermentation followed, and the extraction was carefully monitored to ensure that over-extraction did not occur. The wine matured in 225-liter French oak barrels [25% new wood / 25% second filling and 50% third-fourth filling] for a period of 18 months.

Production The wine undergoes malolactic fermentation.
